Maintaining a coffee machine requires more than a simple water rinse; coffee oils and microscopic residue degrade both flavour and mechanical parts. Understanding the chemistry of cleaning tablets and executing the maintenance programme in the correct order is essential to prevent blockages and preserve the integrity of internal brewing components.
The Chemistry of Coffee Oils and Active Surfactants
Coffee beans contain a high concentration of lipids, essential oils, and proteins. During extraction under high pressure and temperature, these compounds form a rich emulsion. However, as the machine cools down, these organic residues adhere to the brewing group, shower screen, and internal valves. Over time, these oils oxidise, turning rancid and imparting a bitter, metallic taste to subsequent extractions. Because lipids are hydrophobic (water-repelling), plain water cannot dissolve them.
This is where specialised cleaning tablets are required. Unlike descaling agents, which are acidic, cleaning tablets are highly alkaline. They typically contain sodium percarbonate (an oxygen-based bleaching agent) combined with specific surfactants and phosphates. When dissolved in hot water (ideally between 80°C and 90°C), sodium percarbonate releases active oxygen. This reaction breaks down the polymerised organic chains of the coffee oils, while the surfactants lower the surface tension of the water, allowing the dissolved oils to be emulsified and suspended in the liquid so they can be flushed away completely.
The Exact Programme Sequence for Effective Degreasing
The sequence of the cleaning cycle is engineered to balance contact time with mechanical flushing. Disrupting this sequence or bypassing steps can leave chemical residues inside the brewing unit or fail to remove the stubborn oil deposits. Always follow this systematic progression:
- Preparation and Pre-cleaning: Empty the drip tray and waste container. Clean the brewing group mechanically if your machine allows manual removal, rinsing away loose coffee grounds to prevent them from absorbing the active cleaning solution.
- Inserting the Tablet: Place the cleaning tablet in the designated bypass chute (for bean-to-cup machines) or use a blind filter basket in a portafilter. The tablet is engineered to dissolve slowly, matching the duration of the machine's pulse-rinse cycle.
- The Dissolution and Steeping Phase: Initiate the cleaning programme. The machine will pump a small amount of hot water into the brewing unit to begin dissolving the tablet, creating a highly concentrated alkaline solution. The programme then pauses (steeps) for several minutes. This dwell time is critical; it allows the chemical agents to penetrate and loosen the hardened oil deposits without mechanical wear.
- The Flushing and Purging Phase: The machine pumps the remaining solution through the brewing group under pressure, flushing out the dissolved organic matter through the discharge valve. This is often done in pulses to alternate pressure and relaxation, ensuring all internal channels are reached.
- The Triple Rinsing Cycle: The programme concludes with multiple fresh-water rinses. This step removes all traces of the alkaline surfactants, restoring the internal pH balance to neutral.
Why You Must Keep Descaling and Degreasing Separate
A common error is confusing descaling with degreasing, or attempting to perform both simultaneously. Descaling involves acidic agents (such as citric, lactic, or sulfamic acid) designed to dissolve mineral buildup (calcium carbonate) from the heating elements and boiler. Degreasing tablets, being highly alkaline, would immediately neutralise the acidic descaling solution if used together, rendering both completely ineffective and potentially leaving solid salt precipitates inside the narrow fluid pathways.
For optimal maintenance, always perform these procedures as separate cycles. It is highly recommended to run the degreasing programme first to clear away organic films, which can otherwise shield mineral scale from the acidic descaling agent.
The Final Step: Restoring the Micro-Film
After the rinsing cycle is complete, the internal metal surfaces of the brewing group are chemically stripped and completely bare. To prevent immediate oxidation and to ensure the correct extraction profile of your next coffee, always brew one "discard cup."
